Chengdu Tofu
This quick tofu recipe is often sold as street food in Chengdu province in Szechuan. It is super quick and easy. Delicious as a starter or as part of a main course.
Ingredients
- 200 g Soft silken tofu
- 2 tablespoons light soy sauce
- 1 tablespoon chilli oil
- 1 tablespoon sesame oil
- ½ teaspoon ground toasted Sichuan peppercorns
- ½ teaspoon salt
- ½ teaspoon sugar
- 1 tablespoon finely chopped spring onion greens
- 1 tablespoon preserved vegetables or preserved mustard greens
- 1 tablespoon roasted peanuts
- coriander leaves to garnish

Instructions
- Remove tofu from packet - you can either leave it whole or use a spoon to scoop - and place into a bowl filled with just boiled water to warm through. When tofu is warm place in a serving bowl or platter. Or alternatively you can slightly warm in the microwave - medium heat for about 1.30 minutes.
- Mix the soy sauce and other seasonings in a bowl and pour evenly over the tofu.
- Sprinkle over the spring onion greens, then the preserved vegetables and finally the peanuts. NB. If you don't have preserved vegetables you can omit these and leave them out, but the pickle adds a nice fresh hit. Preserved vegetables available at Wong She & Co.
- Serve with coriander garnish.
